Creamy Berry Quinoa Breakfast Parfait

INGREDIENTS

SERVES 1

  • 1/3 cup cooked quinoa

  • 3/4 cup plain low-fat Greek yogurt

  • 1/4 tsp pure vanilla extract

  • 1/8 tsp ground cinnamon

  • 1/4 cup blueberries

  • 9 half walnut halves

DIRECTIONS

  • Mix together quinoa, yogurt, vanilla, and cinnamon.

  • Spoon half of the quinoa mixture into a glass, then half of the blueberries and walnuts.

  • Repeat the layers, ending with walnuts.
