Creamy Berry Quinoa Breakfast Parfait

INGREDIENTS
SERVES 1
1/3 cup cooked quinoa
3/4 cup plain low-fat Greek yogurt
1/4 tsp pure vanilla extract
1/8 tsp ground cinnamon
1/4 cup blueberries
9 half walnut halves
DIRECTIONS
Mix together quinoa, yogurt, vanilla, and cinnamon.
Spoon half of the quinoa mixture into a glass, then half of the blueberries and walnuts.
Repeat the layers, ending with walnuts.
