Zucchini Lasagna
INGREDIENTS:
4-5 Sliced Zucchini
1/2 cup Egg whites
2 1/2 cups Ground meat of choice
1 cup Prepared pasta sauce
1 1/2 cups 0% cottage cheese
1/2 cup Low fat shredded mozzarella cheese
1/4 cup Shredded Parmesan cheese
DIRECTIONS
Dry out the zucchini! There are a couple of methods to do this: you can salt and lay flat and let air dry.
Heat oven to 450F degrees.
While the zucchini is preparing, cook and season the ground meat. Drain and put into a bowl.
Add in the egg whites, Mozzarella cheese and 3/4 cup of the pasta sauce. Put the remaining 1/4 cup in the bottom of a lasagna pan.
Lay a layer of zucchini in the bottom of the pan. Put 1/2 of the meat, sauce, cheese, and egg white mixture on top.
Lay another layer of zucchini. Add the remaining half of the meat, sauce, cheese, egg white mixture on top of the second layer of zucchini.
Put a third and final layer of zucchini on top. Sprinkle with Parmesan cheese and put in the oven for 25 mins.
Let sit for 7-10 minutes to solidify.
