Zucchini Lasagna

 
 

INGREDIENTS:

  • 4-5 Sliced Zucchini

  • 1/2 cup Egg whites

  • 2 1/2 cups Ground meat of choice

  • 1 cup Prepared pasta sauce

  • 1 1/2 cups 0% cottage cheese

  • 1/2 cup Low fat shredded mozzarella cheese

  • 1/4 cup Shredded Parmesan cheese

DIRECTIONS

  • Dry out the zucchini! There are a couple of methods to do this: you can salt and lay flat and let air dry.

  • Heat oven to 450F degrees.

  • While the zucchini is preparing, cook and season the ground meat. Drain and put into a bowl.

  • Add in the egg whites, Mozzarella cheese and 3/4 cup of the pasta sauce. Put the remaining 1/4 cup in the bottom of a lasagna pan.

  • Lay a layer of zucchini in the bottom of the pan. Put 1/2 of the meat, sauce, cheese, and egg white mixture on top.

  • Lay another layer of zucchini. Add the remaining half of the meat, sauce, cheese, egg white mixture on top of the second layer of zucchini.

  • Put a third and final layer of zucchini on top. Sprinkle with Parmesan cheese and put in the oven for 25 mins.

  • Let sit for 7-10 minutes to solidify.
