High Protein Pumpkin Muffins

 
 

INGREDIENTS:

  • 1 cup pumpkin puree

  • 1/2 cup cottage cheese

  • 3 large eggs

  • 1 teaspoon vanilla extract

  • 1/3 cup granulated sugar (coconut sugar or brown sugar)

  • 1 1/2 cups gluten-free flour blend

  • 1/2 cup vanilla protein powder

  • 2 teaspoons pumpkin pie spice

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1/2 cup mini chocolate chips (optional)

DIRECTIONS

Preheat the oven to 350°F.

  1. Grease and line a muffin pan.

  2. Optional: Blend the cottage cheese in a blender before adding to the mixture.  

  3. Mix the pumpkin, eggs, cottage cheese, and vanilla in a large bowl until smooth.

  4. Add the flour, protein powder, sugar, baking powder, salt, pumpkin pie spice, and chocolate chips. Mix until thoroughly combined.

  5. Pour the batter into the lined muffin tins.

  6. Bake in the oven for about 30-35 minutes, or until the top of the muffins begin to brown.

  7. Remove the muffins from the oven and cool at room temperature before serving.
