Avocado Zoodles
Zoodles, avocado and eggs…together this trio makes for a delicious breakfast or lunch!
Ingredients:
1-2 zucchini
1 egg
1/2 avocado
1 tbs olive oil
1 clove garlic
red pepper flakes
salt & pepper to taste
pine nuts (optional)
INSTRUCTIONS:
Spiralize the zucchini and place in a pot on medium heat. Cover and cook for 3-5 minutes.
Chop the onion and garlic and add to a pan on medium heat with some olive oil.
Mash the avocado in a separate bowl.
While the zucchini and garlic are cooking, prepare the egg sunny side up.
Once the zoodles are cooked, add the onion, garlic, and mashed avocado to the pot. Stir thoroughly. Sprinkle with salt, pepper, and some red pepper flakes. Top with some pine nuts and an over easy egg.
