Stuffed Peppers

This time of year, I love meals I can prep in advance that are healthy and the whole family can enjoy… these stuffed peppers fit the bill.

And it’s got a whopping 36 grams of protein per serving!


Ingredients:

  • 4 oz lean ground turkey

  • 2 tsp cumin

  • 2 tsp chili powder

  • 1 tsp whole fennel seeds

  • 1/4 cup cilantro chopped

  • 1/4 tomatoes diced

  • 1/4 cup cooked brown rice (or other grain of choice)

  • 1 red bell pepper halved


INSTRUCTIONS:

  1. Brown ground turkey and spices in a pan on medium heat. Add the tomatoes and cook for another 10min.

  2. Combine mixture with the rice and set aside to cool.

  3. Preheat oven to 400 degrees.

  4. Cut peppers in half, lengthwise, scoop out seeds.

  5. Fill each half with the turkey and rice mixture.

  6. Bake for 15min.

  7. Extra tomato sauce can be poured over the peppers and grated cheese to taste (if desired)
