Healthy Cranberry Orange Muffins

My two favorites for muffins… cranberries and oranges! Try these sweet and tart and tasty muffins :)


Ingredients:

  • 1/2 cup plain 0% Greek yogurt

  • 3 tablespoons olive oil

  • 3 tablespoons freshly squeezed orange juice

  • 1 teaspoon vanilla extract

  • 2 eggs

  • 1 cup whole wheat pastry flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 2/3 cup organic cane sugar

  • 1 1/2 cups fresh cranberries

For the glaze: Optional

  • 1/2 cup powdered sugar

  • 1-2 tablespoons freshly squeezed orange juice

Instructions:

  1. Beat together Greek yogurt, olive oil, orange juice, vanilla extract, eggs, and sugar until well combined

  2. In a separate bowl, whisk together flour, baking powder, and salt

  3. Add dry ingredients to wet, until just combined (do not over mix)

  4. Fold in cranberries

  5. Fill muffin liners 3/4 full with batter (the recipe yields around 12 muffins)

  6. Bake at 350 degrees for 23-26 minutes, or until a toothpick inserted comes out clean

  7. Whisk together orange juice and powdered sugar until it forms the glaze

  8. Drizzle glaze over muffins

  9. Store in the fridge and serve warm or chilled.
