Pumpkin Protein Pancakes

Ingredients:

  • 1/2 cup whole wheat pastry flour

  • 1 serving vanilla whey protein powder of choice)

  • 1 1/2 teaspoons baking powder

  • 1 1/2 teaspoon cinnamon

  • 1/2 teaspoon ginger

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon kosher salt

  • 1/3 cup pumpkin puree

  • 2 egg whites

  • 1 teaspoon vanilla extract

  • 1/4 cup + 1 tablespoon milk

  • 1-2 tablespoons maple syrup (depending on preference)

DIRECTIONS:

Preheat a pancake griddle or pan to medium heat and grease.

  1. Combine all dry ingredients in a bowl.

  2. Combine wet ingredients in another bowl and whisk to combine.

  3. Add wet to dry ingredients and mix.

  4. Pour batter onto pan, cook approximately 1 1/2 minutes per side, or until fully cooked, flipping once.
